12 L Batch Size
1,25 kg mix of Munich/Vienna
75 g Melanoiden malt
75 g Caramunich II
6 g Challenger (60 min)
Brewed with sulfited water to remove chlorine/chloramines. Mashed in with 6 L of 74 C water to mash this beer at 66 C, then sparged it with the remainder of my 19 L of liquor. Boiled it long, to get it down to a suitable volume and gravity. Ended up around 18 BLG in gravity. Added one bittering addition for the last 60 minutes of the boil. Racked to a clean keg for no-chilling overnight. Dumped through a sanitized funnel into the fermentor with the yeast cake from the festbier and doppelbock. Fermented it in my cellar at 12 C.

150 g Melanoiden malt
150 g Caramunich II

Pushed my gear to the limit with this beer. Intended for it to use more grain, but couldn't manage in my time constraints that day. Brewed with sulfited water to remove chlorine/chloramines. Mashed in with 10 L of 74 C water to mash this beer at 66 C, then sparged it as much as I could not to overdo my kettle. Boiled it long, to get it down to a suitable volume and gravity. Ended up around 18 BLG in gravity. Added one bittering addition for the last 60 minutes of the boil. Racked to a clean keg for no-chilling overnight. Dumped through a sanitized funnel into the fermentor with the yeast cake from the festbier. Fermented it a week before kegging. Bottled as much as I could so that my wife wouldn't drink it all. One of her favorites, but will benefit from some aging. 12 bottles of various sizes labeled and in the cellar for later.

Z 6.4 kg wyciągnąć 25l 15blg Imho to przyzwoity wynik. Jakieś 60% liczone po polsku.
Ile czasu zajęło całe wrzenie? Od momentu włączenia do prądu do momentu posprzątania po warzeniu?
Mycie po warzeniu sprawiało jakieś kłopoty?
Nie rozumiem równan polskiego. Jest bez sensu. Lepiej uzywac zwykły równan.

Czy cena podejrzanie niska? Regularna cena to 48 funtów (60usd). Tu pozbywają się pewnie niechodliwych kolorów. Mam ten termometr, używam w swoim browarze. Tak szybkiego jeszcze nie używałem. Sprzedawca to nie jakiś chińczyk, tylko brytyjski producent ETI Ltd. Polecam!

Moje zastosowanie to m.in. pomiar temperatury "in-line".
Tego jest popularny w stanach gdzie jest 80+ dolarów. Troche drogi tam gdzie jeden firm sprzeda, ale producent jest w Anglii. Na eBay są rózne rodzaje tanio (refurbished albo dziwny kolory). Kupiłem już 3, i nigdy nie miałem problem. Brat ma jeden, ojca też. Tylko 29 funtów teraz.

Temperatura kleikowania jęczmienia to 60-65C, wiec nie ma potrzeby ich kleikowania przed zacieraniem!
I czasami płatki (instant) są już kleikowane

doświadczenie z tego tygodnia: wlane na gęstwę z poprzdniego piwa S04, 24 blg. Po 5 dniach patrzę, a tu ani bulka, ani piany nie ma. mierzę - 7 blg. Zajrzę za miesiąc i zabutelkuję. A jakie winiarskie i jak dodajecie do nagazowania RiSów mocniejszych?
Nagazowałem Porter 14% na US-05 po 6 miesiacy bez dodatkowo drożdze. Dlaczego dać wiecej?

Przez miesiąc zmieniała się gęstość? Jeżeli nie, to cicha już trwa i 3 miesiące to zdecydowanie za długo.
To nie ma racje. 3-6 miesiący nie jest problem. Autolysis był problem dawno dawno temu, ale teraz drozdze są lepsze.
Nie widzę sensu trzymania RIS'a tak długo we wiadrze. Tym bardziej, że autor nie będzie używał środka do refermentacji.
Po pierwsza urodzina warka jest możliwe refermentować bez problemu. Jest możliwe że drozdze nie skonciłą wzystko. Jak nie zrobił FFT, nie ma informacja. 63% to nie dużo. Ringwood jest podpisany 68-72 do 10% alkoholu. Może drożdze troche słabo bo ma około 9.7% ABV, a jest za młody jescie po 1 miesiąc. Lepiej czekać, bo czas wiecej niż 1 miesiąc nie bedzie dac offflavor.

Festbier #1
12 L Batch Size
1,5 kg Barke Pilsner
1,2 kg Barke Vienna
150 g Melanoiden
17 g Mittelfruh 4,7% (60 min)
Brewed with sulfited water to remove chlorine/chloramines. Mashed in with 9 L of 74 C water to mash this beer at 67 C, then added water to mash out. Batch sparged once. Total water volume was 17 L for 16 L total runnings. Boiled it for an hour with a single hop addition. Poured into sanitized 19 L keg fermentor and sealed on CO2 to prevent negative pressure from damaging the keg. Left it overnight before putting it in the fridge to chill to 12 C.
Fermented it 4 days at 12 C, before removing it to ambient and kegging at a week. Drank a decent amount of it off the tap. Contains a nice malty backbone, low hop presence, with very good drinkability. Still needs some time to clear so I bottled the remainder off with a beer gun and put it in the cellar (12 C) to age.

Jakoś nie wspomniałeś jakie drożdże i jak zadane
Z jednej strony dwa tygodnie to już trochę, z drugiej Porter Bałtycki to dolniak i trochę nie ma sensu porównywać fermentacji.
Pytanie ile miałeś do tego gęstwy jak szybko ruszyło i w jakiej temperaturze to trzymasz. Tu bym się specjalnie nie spieszył z nerwowymi ruchami
Z tym Wee heavy tez bym się nie spieszył, sam piszesz że fermentacja jeszcze nie stanęła.
Do Porteru - drożdże z Sierpca. Poprzednia warka odfermentowana prawidłowo. Świeża gęstwa. Odpowiednia ilość.
Do Wee poszły FM Szkoty. Poprzednie piwo odfermentowane w porządku. Gęstwa chyba 1 dniowa. Ilość odpowiednia.
Miałem bardzo wolno fermentacji przez FM Szkoty, a dałem US-05 na bezpieczenstwo, i poszedł do końcu bez problemów.

Some wine yeast will produce inhospitable environments for other yeast and bacteria. Bayanus nie jest dobry pomysł.

Brewed with sulfited water to remove chlorine/chloramines. Mashed in with 10 L of 74 C water to mash this beer at 66 C, then added water to mash out. Batch sparged once. Total water volume was 19 L. Boiled it for a half hour with a single hop addition. Poured into sanitized keg fermentor and sealed on CO2 to prevent negative pressure from damaging the keg. Left it overnight before putting it in the fridge to chill to 20 C for fermentation. Pitching Fermentum Mobile Monk's Meditation (FM25). Racked 9 L into a keg to drink straight. Added 2,5 kg cherries when primary fermentation was finished to the remainder. Bottled both verions.

Seems you understand the situation greatly. It could also be yeast dependent. More time on the yeast and which yeast you used (and any contamination) could be affecting things.

I'm not entirely capable of wring this all in Polish, so if you do not read English, maybe someone on the forum can help. There are many factors which influence head retention. The largest one, is that head retention comes from proteins. You can improve head retention by using flaked wheat and flaked barley. By resting at 52 C, you have probably reduced your head retention due to protease activity.
Also be aware how you clean your glass will determine head retention. You should be rinsing with cold water and if possible spraying it out with star san. Using liquid soap or putting them in the dishwasher probably hurts.

Do warka 23 litrowa, powinna być około 5 kg ekstraktów. Chmiel powinna być dobrze.
